Cooking with Eric – Broccoli Pasta


RAPID CITY, SD (KOTA) – Here’s a recipe for broccoli lovers and broccoli haters. It’s a new way to enjoy these sublime vegetables that even George HW Bush might like.

First, cook half a pound of angel hair noodles according to the package directions. Drain, collecting 1 cup of pasta water. Put aside.

Steam or heat a packet of broccoli florets or chopped broccoli in the microwave. Let cool a little and then put in a blender or food processor. To the broccoli, add a quarter cup of chopped fresh basil (1 tablespoon dried if you don’t have the fresh stuff), 3 tablespoons extra virgin olive oil, 1 tablespoon grated fresh lemon peel, and 3 tablespoons fresh lemon juice. Also add a quarter teaspoon of salt and a quarter of a teaspoon of red pepper flakes. Add 2 chopped garlic cloves and 2 anchovy fillets wrapped in oil. Yes, anchovies add to the depth of flavor of this sauce.

Mix or process until smooth and add some of the reserved pasta water to ensure consistency.

Put the pasta in a bowl, pour the sauce over it and mix. Serve with grated Parmesan or Romano cheese.
