Buttermilk Cookies + Cheddar, Spring Onions: Cooking with Courtney


Cheddar and onion are such a classic combination. I myself am a big fan of spring onions, AKA spring onions. They’re so much sweeter and milder than your average onion, and you can find them plentiful in the grocery store all year round.

These spring onion cheddar buttermilk biscuits are super beginner-friendly, calming snacks. No yeast required – this is a quick bread recipe that soaks up thanks to the baking soda and acid in buttermilk. It has actually been modified from one of my most widely read recipes: my family’s authentic Irish soda bread recipe! Basically, you toss everything in a bowl, roll it out, and cut it into circles, triangles, or whatever shape your heart desires, and only bake it for 15 minutes.

And boom, homemade buttermilk biscuits! Yes, it’s that simple. You will make your kitchen smell of heaven. Heaven i tell you.

These cookies are fantastic too when made with the green tips of sweet spring onions that are now in season. Definitely give it a try and then use the actual onion part in a salad or other recipe.

If you’re looking for a tasty, hearty breakfast scone, these are to die for with your morning coffee. Or maybe serve them alongside your dinner, salad, soup, egg whites … pretty much anything! They could be a starter or substitute for dinner at your table.

I like to serve mine with melted, salted butter. However, you will get bonus points if you melt a little cheddar on top just before serving.

You can also serve them with some kind of creamy dip. A whipped ricotta dip would be fantastic, or maybe a jalapeño artichoke dip.
